Coffee and Walnut Cake

Coffee can be an acquired taste, but this cake is so light and subtle it’s hard to say no. The first time I made this recipe was for a friend's birthday in Galway and it was an instant hit. With there being a bit of a coffee revolution at the moment this recipe is perfect. If you have the full regalia fire the machine up and use your favourite coffee. But don’t worry if not, your favourite instant coffee will do the same job.

Turn cooking mode on

Step 1

Get your your butter and caster sugar beat together until pale and fluffy, scraping the sides down halfway through. In a separate bowl combine your flour, baking powder and salt, setting aside.

Made the coffee cake but as it was going to my daughters work I didn't include nuts.Also decided against icing it as it can get messy.The workforce love it though especially the men.👏

This was the second attempt and it was almost gone before I had a chance to photograph it. The first attempt didn’t rise and sunk in the middle, so I changed the oven setting to 180 and it worked better. I guess it’s knowing your own oven and its peculiarities! Lovely recipe, cake is delicious, I’ll cut back on icing sugar next time, but family all loved it, which is who it was made for, they have asked for Strawberry cake again!

When it’s inhaled before a photo, that’s a good sign 🙌🏼 Not sure what happened there Lisanne? Is your oven fan assisted? Sometimes it’s about getting a feeling for your oven 👍🏼 My Nanny’s oven runs way hotter than ours at home 😅

No need to thank me Pam, I hope you enjoy this one 😄 The coffee flavour is quite subtle but it's perfect 🤤 If you aren't pairing it with a warm cuppa don't be afraid to make it stronger 🙌🏻 Keep the liquid amounts the same but just have the espresso more intense and strong 👍🏻
