Chocolate Carrot Slice

These are bit of a twist on your normal carrot cake and so handy to rustle up. They still have that deliciously moist sponge, filled with juicy fruit as well in this case. Bursting with that cinnamon, walnut goodness, plus the addition of sweet chocolate chips. Then topped with a luscious cream cheese frosting, it all comes together to create a match made in heaven.

Step 1

Sift your flour, cinnamon and caster sugar into a bowl, mixing together. Add your dried fruit, chocolate chips, walnuts and desiccated coconut and combine the lot to evenly distribute. Finally in with your carrots and give it another rough mix.
