Rhubarb Tart

It's hard to beat a bit of Rhubarb tart and we are blessed with having some in the garden. When it's in season it goes straight into one. Like all of our tarts it has that buttery flaky pastry that melts in your mouth. Rhubarb is special in my eyes, it brings that delicious tartness and bite to the table, yet sweet from the sugar. This warm with a scoop or two of vanilla ice cream is glorious, or if it's chilly out some thick warm custard.

Method

Turn cooking mode on

Step 1

First half your shortcrust pastry (recipe for this is in the notes section) and get it onto a lightly floured surface. Roll one half out to the size of a large dinner plate (roughly a 9 in plate), you want it to be about 5mm in thickness. Pop this onto your plate and dust with a some cornflour. This helps to absorb the extra juices and thickens the filling nicely.
