Simple Tomato and Basil Soup

This simple tomato and basil soup is perfect for this colder weather and goes down a treat. It's full of the rich tomatoey flavour we all love and knocks an aul tin of tomato soup out of the park. This with a warm crusty loaf lathered in real butter really is the ticket.

Method

Turn cooking mode on

Step 1

Pop your halved tomatoes onto a baking tray with some greaseproof paper and drizzle over 2 tbsp of olive oil. Season this with salt and pepper. Fire these into a fan assisted oven on 160 degrees for about an hour, just to the sides shrivel up and they're nice and juicy in the middle. I turned it up to 180 degrees fan for the last 15 minutes or so.
