Lemon Meringue Cake

I created this cake for my wee sister's birthday and it went down a storm. Light, fluffy and packed with lemony flavour. The delicious sweet meringue is the perfect combination and I think it might push your traditional lemon meringue to the side. The fact I could hardly get a word out of my Granda during his review says it all. It's perfect for any occasion and now one of our go to favourites!

Method

Turn cooking mode on

Step 1

Get your butter, oil and sugar into a mixing bowl and beat until very pale and creamy. Scrape the sides down midway through so it's fully combined. Add your eggs one at a time, beating between each addition until fully incorporated. add your vanilla extract and beat this through.
