Old School Cake

This one will always be a favourite and just seeing it brings back the memories. It's extremely simple to make, yet tastes so good with the light airy sponge and sweet icing. Like everything, simple done right is hard to beat. But pair it with some warm custard and it’s nostalgia in a bowl.

I made the mixture ,divided it into 2x 9 inch tins.Usually I put the two cakes together with cream and jam but this time just iced and sprinkled it.

Awesome work Gail, love how you adapted with the tins you had 🙌🏻 That's the beauty of cooking and baking, you can work with what you have 😄 I bet it was delicious with a warm cuppa or some custard 🤤

I prefer this recipe to make a Vic sponge type cake. Its far lighter and fluffier and I've added chocolate or coffee to it for a change too.♥️

I know what you mean but I’m a sucker for a Victoria sponge 🤤 Great wee change up there for added flavour 🙌🏼 I think you’d love the light sponge cake I made recently then!

Great recipe, lovely cake. I think I put too much milk in the icing sugar, still amazing.

Thank you Lisanne 😄 I wouldn't worry about that, it's all about how it tastes! If you want it a bit thicker next time just add a bit more icing sugar to balance it out 👍🏻

Thanks for that makes sense to add more icing rather than add less milk. It was light and fluffy. Tasted amazing.
