Old Jamaica Ginger Cake

If you're a fan of an Old Jamaica Ginger Cake, you need to give this recipe a go. It could be viewed as old school but we always had one in the cupboard. It's perfect for when someone calls round unannounced for a cuppa. That's if there's any left because I love a few slices plastered in butter. It has a light spice, holding a lovely moisture throughout and wee chew. It's honestly beautiful and simple done right is hard to beat.

Method

Turn cooking mode on

Step 1

Add your butter, golden syrup, treacle and brown sugar to a saucepan. Gently melt this down over a low to medium heat, stirring occasionally so it doesn't stick to the saucepan. Once melted set aside and allow to cool slightly.

Brilliant recipe. I used the quantities here to make an 8" sandwich cake with spiced butter icing as a birthday cake. It was a complete hit with the birthday boy eating it by the slab. Thank you 😊

I can't see why not? The flavour might differ slightly is all, but the consistency should be okay. It can be a bit of trial an error with milk/flour alternatives. But that's what the wee community is all about here, learning and growing together!
