Diana Bars

These are another traditional traybake and very similar to the humble fifteen, yet so different. They’re like a fancy fifteen in my opinion. I'd say these are only known in Northern Ireland and we definitely have the run on the traybake game about here. My best mate Carey and I will argue you can't get a 'nice wee bun' anywhere like home. He's in London and yes they have fancy bakeries but they can't seem to nail the simple traybake. They’re simple to make, just how I want all my recipes to be. Honestly, I think anyone could make these wee gems. They're seriously delicious with their sweet and coconutty flavour, along with the chewy marshmallow and crunchy biscuit texture. Get the kettle on immediately because I'm calling round for one!

Method

Turn cooking mode on

Step 1

Add your rich tea biscuits to a food processor and blitz up finely. Alternatively take to them with a rolling pin in a large bowl, it all does the same job. If you like a bit of texture and crunch, hold a few back and break these up roughly with your hands. Pop these into a large bowl add fire in your marshmallows, mixing throughout so they don’t stick together.
