Marshmallow Fudge Tartlets

These are considered the best wee bake in our house and for good reason. Buttery pastry shell, sweet raspberry jam, marshmallow centre and topped with a delicious chewy caramel. They're ‘bite size’, if you have a mouth on you like me, and are one of my favourite wee buns to make. I’d have about five of these polished off before the chocolate has even set. Once you try them you'll soon understand why.

Method

Turn cooking mode on

Step 1

Get a hold of your shortcrust pastry (recipe is in posts), and roll this out on a lightly floured surface to about 5mm in thickness. With a floured pastry cutter or glass, cut your pastry discs out. Place each disc into your patty bun trays and prick the base with a fork.
