Cinnamon Swirl Banana Bread

I missed the banana bread craze during lockdown but this cinnamon swirl banana bread quarely made up for it. The cinnamon swirl locks in the moisture, caramelising throughout and also gives a delicious crisp crust on top. The beauty is you just chuck all the ingredients into one bowl and mix. This recipe began in Galway so it's special to me, bringing back very fond memories. I hope this wee recipe brings you joy and there's special memories created over it too!

Method

Turn cooking mode on

Step 1

Add your melted butter, caster sugar, vanilla extract and eggs to a large bowl, whisking together until combined and smooth. Now fire in your mashed banana and mix this through until combined. Sift your flour and bicarbonate of soda into the mixture, gently folding through with a spatula until fully combined and smooth.

Our new family favourite. Took no time at all to prepare. Just the job with a cuppa. Not the best marbling this time but will perfect that with more practice

Didn't turn out as swirly as your nans, but a big hit. one thing, make sure your melted butter is somewhat cooled before adding to the eggs, otherwise they could scramble and don't forget to line your tin with some parchment paper. For us US peeps, use kerrygold butter and set the oven at 320-340 for 70 mins

Oooh, now this sounds delicious. I've to do some baking for the local Women's Shed on Sunday and I've just got to add this to my list. I'll post photos and the reactions after I bring it in on Monday morning to them.
