Easter Biscuits

These wee biscuits are perfect for the Easter holidays, so simple to make and great for the kids to decorate. A buttery shortbread biscuit that melts in the mouth, unlike the decorating kits you get in the shop that can be like sawdust. Method

Turn cooking mode on

Step 1

Add your flour and cornflour to a food processor, gradually adding your butter to this whilst blitzing. This will form a nice breadcrumb consistency. Give the bottom a wee scrape with a fork at the end and blitz once more. You can do this by hand in a large bowl, just gently rub the butter in with your fingertips until combined.

Today was baking day and this is the third item I made. I love this recipe. I’ve tried so many “cookie” recipes to try and find the right one and this is it. It’s simple and easy and the result is so yummy. My Christmas cookies now will be edible and not like bricks.
