Step 1

Get your butter and caster sugar fired into your bowl and cream these together until light and fluffy. Midway through give the sides a wee scrape down so it's full incorporated. Add a little bit of your egg, flour and salt mixture, mix this gently and it will help it from curdling. Gradually repeat this mixing well after each addition. Give the sides a scrape down to ensure it's fully mixed.
