Pistachio and White Chocolate Cheesecake

Half the country is obsessed with pistachio these days, me included. So I had to rustle something up to satisfy the itch. I came up with this pistachio and white chocolate cheesecake and it was delicious. Deliciously creamy and sweet from the white chocolate and cream cheese. And the pistachio adds a lovely light, nutty, and buttery flavour. I even used Nice biscuits for the base and the coconut flavour worked perfectly.

Method

Turn cooking mode on

Step 1

Crush your nice biscuits in a large bowl or blitz in a food processor. Add about 4 wee handfuls of chopped pistachios to this and mix through. Add your melted butter to the bowl and mix these together until combined. Fire this into your 8 inch springform cheesecake tin, pressing evenly into the base. Pop this into the fridge and move onto your cheesecake filling.
