Fifteen Cheesecake

This might be my best creation I've made yet.. Stay with me here but a fifteen cheesecake. Fifteens are the King of traybake's here in Northern Ireland. Myself and one of my best mates Carey will argue that we do them better than anywhere else in the world. So I thought why not put the best one in a cheesecake and boy did it work! It has the lovely sweet chew a fifteen provides, with a creamy coconut filling packed with mini fifteens throughout. Whats not to love?

Step 1

Start by making your fifteen base. Add your crushed digestives into a large bowl along with your chopped marshmallows. Give these a wee mix together to avoid the marshmallows clumping together. Now tip your chopped glacé cherries in and mix as well. Pour your condensed milk in and combine fully with a spoon. Take 1/2 of your mix and place in a separate bowl, you'll see my initial thoughts were wrong in the video.

This also amazing however you only need a small slice because of the fifteen base the topping and then the fifteen balls. Definitely a hit when you have to make a dessert for a party or visiting friends
