Buttermilk Fruit Cake

My Auntie sent us this recipe and it went down a treat. According to my Granda Alfie 'it has it'. The buttermilk makes it extremely soft and moist, giving a beautiful texture. It's packed with flavour from the juicy fruit, mixed peel and spice making it a real winner. Simple to make and perfect for a midweek treat. Or even better, to drop in to a close friend of family members house with unannounced.

Method

Turn cooking mode on

Step 1

Sift your flour into a large bowl and chuck your butter in along with it. Rub this through your fingertips to create light and airy bread crumbs. It will be ready when there's no big lumps left. Add your caster sugar, bicarbonate of soda and mixed spice and work this through the mixture.

Second time making this now, it’s so simple but so light and moist and I just love the mixed spice flavour 🥰 .. so light actually that I could easily eat the whole thing with a cup of tea! 🤣 … also featuring my lazy girl hack of lining my loaf tin with foil as i absolutely hate greasing and lining cake tins! 😂

Delighted you've came back to this recipe Nikki, it's a tasty one 🙌🏻 Trust me we've eaten a full one in a sitting with a pot of tea and a drop of butter plastered on it 😅 Love that wee hack, not sure i could convince my Nanny though 😂 She does use wee cake tin liners from time to time though!

Haha, no I would never expect her to approve of the tin foil! 🤣. It’s such a good cake, I try and only eat sweet stuff at the weekend but my dad has it for breakfast which I can’t say I blame him!

Had a bit of buttermilk to use up so gave this one a go and it was delicious! A really light and moist cake and the mixed spice makes it perfect for this time of year, could have easily eaten the whole thing 🐖

I’m normally not fussed if chocolate’s not involved but I will definitely be making it again! I only had 2 slices as I’m trying to be a health queen 👸🏻🤣 but my dad loved it as well and had it for his breakfasts in the week 😂
