Raspberry Ruffle Cheesecake

If raspberry ruffles weren't good enough on their own, they certainly are when you create a cheesecake version. I've said before Mum loves them and this put me in the good books. The chocolate digestive base was a great change up, giving an added chocolate hit to the sweet and tart raspberry flavour. The filling is rich and creamy, packed full of raspberry flavour and chunks of that delicious raspberry ruffle. It's a great one to surprise all those old heads or any raspberry ruffle lover.
