Creamy Chorizo Pasta

After my Granda saying I should open my own restaurant, I think this should be the first thing on the menu. Especially when reaction was ‘is there any leftover’. It’s serious tasty and best of all so handy to make. A deliciously creamy flavour with just the perfect spice, you’ll love it. It’s properly filling and great for a wee midweek or weekend dinner.

Step 1

Put a wee cut around your tomatoes with a knife and place them into a bowl. Cover them with boiling water and allow to sit for 10-15 minutes. Once they've softened down, peel off the skins.

Really liked this. Easy to make. I think I would add a little more rosemary and chilli flakes. But that’s personal taste. I would make this again 👍

Had to improvise a bit on this one and use what I had in as I was originally doing lasagne until I realised the mince was still in the freezer 🫠😂. But a great recipe, full of flavour and makes a great comfort meal 🫶.

Love how you've improvised there! We can work with whatever we have at times and it really does the job. I will have to do a wee video around that because I make so many throw together meals. Just using what's leftover or things in the fridge.
