Upside Down Chocolate Cheesecake

Who would have known this is the dessert we all needed. Not the traditional cheesecake by any stretch of the imagination but ohhh so good. It has a delicious chocolate crust and mousse, combined with a creamy and indulgent cheesecake filling. You can put your own spin on it with your chosen chocolates in the centre but the rest really does the business. It could definitely be a centrepiece dessert to catch the eye but like my Granda I could just eat it with a shovel for a spoon!

Method

Turn cooking mode on

Step 1

Get your digestives crushed up finely and into a bowl, add your cocoa powder mixing it throughout. Pour in your melted butter and combine this all together. I found lining the base of your spring form tin will help when removing, so do this with some greaseproof paper.
