Iced Apricot Fruit Cake

I nicknamed this wee cake, 'The Harry Potter Loaf'. All because of my Granda giving a score of 9 and 3/4. He's a tough nut to crack when it comes to getting a 10 but that's what you want, honest and straight reviews. It means that the finished product will be worth it and believe me this one is. It's moist, delicious and packed with fruity flavour! The icing gives it a lovely sweet hit, making it the perfect combo to accompany any warm cuppa. Trust me this wee loaf will disappear in no time. It will be as if Harry Potter waved his wand at it and 'poof' it's gone!

Method

Turn cooking mode on

Step 1

Fire your butter into a mixing bowl along with your sugar and beat until creamy. Crack your eggs in and add your self-raising flour to the mixture. Beat this well until the mixture is smooth.
