Easy Biscuit Base Banoffee Pie

There's always more than one way of doing things and this is a quick and easy Banoffee. This is sped up by making a buttery biscuit base, a bit like a cheesecake. And you know what it might actually work better than the traditional pastry one in my opinion. It still has that sweet and somewhat chewy caramel, with plenty of lightness and freshness from the softly whipped cream and banana. This with a warm cuppa is hard to beat if you're asking me.

Method

Turn cooking mode on

Step 1

Crush your digestives in a large bowl or blitz in a food processor. Add your melted butter to the bowl and mix these together until combined. Fire this into your 8 inch springform cheesecake tin, pressing evenly into the base. Pop this into the fridge and move onto your caramel.
