Banana, Date and Walnut Loaf

This is one of my Nanny's recipes and a delicious one at that. Wee would have a soft spot for a wee loaf cake and have an endless amount of recipes for them. The banana adds a healthier component but more importantly brings loads of moisture. It has a lovely buttery taste, with the added textures and flavours from the dates and walnuts. It's a winner here and I hope you enjoy it.

Ingredients

Method

Turn cooking mode on

Step 1

Sift your self-raising flour, baking powder and caster sugar into a mixing bowl. Give this a wee mix to combine. Mash your bananas and lemon juice together and add to the dry ingredients. Along with your beaten eggs and melted butter. Mix this all together until smooth and combined.

Delicious cake. I reduced the amount of dates and added some blueberries that needed to be used up. Didn’t need butter as it’s substantial enough. It won’t last long!

Looks delicious Sarah 😄 Love how you used up what you have! You can always mix things up slightly in that regard as long as you don't play about with the bases of the recipe 🙌🏻 I'll have to try that variation out 🤤
