Fruit Bannock

Fruit Bannock is a recipe that screams tradition. I'd say every house in the country has had their fair share of it, as well as having their own version. Any good old school traditional bakery will be know for there's and those wee gems are getting harder and harder to find. It will forever be one of my favourites. And the fact the author seems to have been my wee sister when she was small makes it even better.

Method

Turn cooking mode on

Step 1

Add your soda bread flour and butter to a large bowl, working the butter through the flour with your fingertips. It will resemble fine breadcrumbs and become airy. Now add your caster sugar and work this through the mixture.

Always make something nice for breakfast on a Sunday and this week was the fruit bannock. Definitely added a bit too much liquid though and it ended up ended up being bit of a beast! 🤣 but still delicious and now don’t need to eat for a week 😮‍💨 (or at least a few hours 😂).
