Nanny's Crunch Cream Buns

These wee yokes remind me of one of my favourite biscuits, the fox's Crunch Cream. Like everything though when they’re homemade they taste so much better. When I was younger my Nanny would have made these regularly and I only recently discovered that she helped make them in a local bakery back in the day. They have a tasty crunch, hence the name. With a taste that's almost golden, if that makes sense. The buttercream is deliciously smooth and sweet, the perfect combination to go with the crunchy texture.

Method

Turn cooking mode on

Step 1

Add your butter and sugar to a mixing bowl, creaming together until soft and fluffy. Scrape the sides down midway to ensure it's combined. Now in with your golden syrup and vanilla extract, beating them throughout.
