Pastel de Nata

After sampling a slap of these wee yokes in Portugal, I had to try a recipe. They're surprisingly handy to make when you take a step back and do it in stages. They have that distinct crisp and flaky pastry and rich delicious custard filling. I was delighted with how they turned out and really hope you give them a try.

Step 1

Add your water and salt to a bowl and mix this together. Sift in your flour and mix this in to combine. Once it comes together work it with your hands until you get a nice smooth dough. When it's smooth place it in the bowl and cover with a clean tea towel, allowing to rest for about 20-30 minutes.
