Flakemeal Biscuits

These have always been a classic in our house and generally there will be a wee tin box filled for when a visitor arrives. It's always a treat when you've homemade biscuits at the ready. They have a beautiful crisp crunch, delightful texture and not too sweet. The perfect balance to allow you to have more that one in my opinion and the best combo for that warm cuppa tea or coffee. A lot of people will downplay how good these wee oat bickies are! Yes, they’re old school and remind you of your Nanny’s house, but let’s be honest that’s what it’s all about. When I’m having a wee treat, I want to be transported back to a point in my life, and what’s better than being a youngin’, horsin’ these into ye with a cuppa tea in your Nanny’s kitchen?

I have been using my Mum's recipe for years. I think the coconut improves the flavour of your biscuits. My Mum iced them with coffee flavoured icing and then dipped toasted coconut.

Couldn’t not make these! So good and I definitely did not give them a good shake … in fact I piled on as much chocolate as I could 😂. Only downfall was not realising I don’t actually have a biscuit cutter and the only thing I could think to use was a measuring cup so they’re a bit rough and ready but still tasted amazing 🥰

I didn’t even think of using a glass! 🤣 but the measuring cup served me well even if some of them looked a bit balloon shaped 😂. These have had me in a choke hold all week though as I was back to my no treats rule from Monday but have had a rubbish couple of days and all I wanted to do was cry and take it out on the flakemeals 😂 but I stayed strong and thankfully Dave is making light work of them!

I think I just over did it a bit in January as I really forced myself to keep busy and make lots of plans and then think I just burnt myself out a bit but I’ll be fine 🙂. I know I shouldn’t be so hard on myself but once I’ve made a rule i feel so guilty if I don’t stick to it 😂. Hope you’re looking after yourself and you had a nice birthday ❤️

Haha, I think we might be! 🤣 and it is but we just have to remain positive and enjoy the good days and remember the bad days are just that! Things will always work out how they are meant to in the end ❤️. Aww good! Make sure you go if you can, I am off to London this weekend and I really can’t wait, I think it’s just what I need. Just need to come up with some ideas of places to go, it usually revolves around food and we share so many food places between us and then when it comes to it no one can think where to go 🤣

We’ve got a shared Google map for bakeries, pubs, pizza and just general restaurants and you can barely see the map because we’ve all added so many places, so more than likely! 🤣, You should share more food next time you go though! I do need some recommendations for Belfast, So far I am hoping to get over to Flout as I’m dying to try their pizza 😩 and need to try a Belfast pasty! And obviously I will be purchasing many bags of Tayto’s 🤣

You'll have your work cut out trying to get to them all 😂 What we try to do is a thing I've termed 'Irish Tapas'. We pick places and get 1-2 things and share it between 3-4 of us and then on to the next spot 🙌🏻 I'll share more next time, never really sure if people would like to see that stuff? Flout is on my list, I'm sure we'll get you a few nice spots lined up when you visit 😄

That’s exactly what we do! it’s honestly a red flag for me if people don’t want to share food, even if I just go out for a meal with someone I still want to try whatever they get, And even better if you can’t decide between the same things so get both and share 🤣. I definitely think people would like to see it! look at the shite some content creators share, at least that’s interesting 🤣. I’m not spending as much time as I’d planned in Belfast, as I’m being held hostage in Portrush which I did suspect may happen once I said I was coming up but I’m not mad about it. I can’t believe you haven’t been to flout yet! I also want to try Charlie’s pizza on the Ormeau Road and I also really to try a northern Irish Chinese, I’m probably outing myself for the weirdo that I am now but that’s something I watch on TikTok is NI people showing what they got from the Chinese 🙈🤣 … as we’ve mentioned before I am easily pleased 😂.

Portrush is lovely though, there's a great carvery dinner in the Royal Court Hotel. It's old school but so good 🤤 I haven't had a Chinese in a long time but there's plenty of decent ones about 😄 Bo Tree in Belfast is an unbelievable Thai restaurant you might like 🙌🏻

We tried Onsu bakery in Soho on Saturday and I think that was my definite food highlight of the weekend, they do the -86 degree coffee which was so good, but it was all amazing 😍. I would definitely share more if I was you, especially if it ups your engagement and potentially makes a bit more money, I’d be a nightmare if I had loads of followers, I’m bad enough and I’ve only got 400 🤣. The carvery does look good! Not sure what my obsession with the Chinese is, most people visit and want to see the giants causeway or the titanic museum, I want a Chinese and to go to Centra 😂
