Jelly Ring

This is another blast from the past, definitely a local one but ohhh boy does it go down well. It always made an appearance for Sunday dessert and it's a real fun one. Anytime I see one the memories flood back and the nostalgia would be the same for locals here at home. It has a lovely light airy sponge, cream and jelly, what’s not to love. Perfect for kids and probably the reason for the nostalgia. Then again no grown up will be turn their head up at this wee gem.

Method

Turn cooking mode on

Step 1

First make your jelly by following the instructions on the packet, allowing to partially set in the fridge. You can pop it into the freezer as well but make sure to keep an eye on it, stirring every 20 minutes or so.
