Potato Bread

When it comes to traditional bread, potato bread is the king. I've heard so many names for this humble bread but they all taste great. I’ve had an addiction to it since I was a young fella and if you’ve had it you’ll understand why. When there was a fry up on the go, I’d trade other fry items for this stuff. It was a like a currency to me! I always plastered it in red sauce but my palate has broadened a bit since then. It’s an essential on an Ulster Fry and one isn't complete without it.

Method

Turn cooking mode on

Step 1

Get your leftover spuds into a bowl and mash these up. You want them slightly warm, so heat them up gently in the pot or in a microwave. Once smooth add your butter and salt, mashing these to combine.

Can’t beat a Friday fry! 100% agree this is the best bread! Always brings back happy childhood memories and is the ultimate comfort food for me. I’ve made it many times now and very proud of myself that I can now make it by eye! 💁🏻‍♀️🤣 but your nanny’s recipe is the one that got me started ❤️.
