Turkish Delight Cheesecake

Turkish delight is one of those chocolates some people can't stand but I don't know why? The traditional one encased in milk chocolate is sweet, fruity, chewy and has a seductive gelatinous texture. So why wouldn't that work in a cheesecake? The silky smooth and creamy chocolate filling works so well with the chopped Turkish delight throughout. Pairing this with the old faithful buttery biscuit base, it was always going to taste great. I'll have to give my wee sister credit for this idea because I never would have thought of it, but boy did it work!

Method

Turn cooking mode on

Step 1

Crush your digestives in a large bowl or blitz in a food processor. Add your melted butter to the bowl and mix these together until combined. Fire this into your 8 inch springform cheesecake tin, pressing evenly into the base. Pop this into the fridge and move onto your cheesecake filling.
