Easter Simnel Cake

I’d never heard of an Easter Simnel Cake but my Nanny showed me the ropes with her recipe. It would put you in the mind of a Christmas Cake but completely different according to my Granda! Moist and full of juicy fruit, with a hint of light spice and not forgetting the sweet almond marzipan. It’s pretty cool learning about any recipe but especially these old traditional ones. I even got a history lesson on why you place 11 marzipan balls on top.

Step 1

Add your butter to a mixing bowl along with your light brown sugar. Beat these really well until they're light and fluffy, scraping down the sides of your bowl midway through. Fire your eggs in, self-raising flour and mixed spice, slowly mixing until combined. Again scrape the sides of your bowl midway through to ensure it's mixed well.

I love that your grandparents give you the history and lore of all the goods you cooks - ie why there is only 11 and not 12 balls on the cake!!! All the little extras you’ll be able to pass on to this community and the generations to come as will we all!!! And no doubt others here in our community will be able to add their local lore too!!! So our history and story of food and cooking will grow. What a fabulous legacy to create!!! Happy Easter Jonny and hungry hookers everywhere !!! Keep on cooking, eating, sharing, supporting each other and having fun. Love 🥰 you all😘😘 b

I'm blessed to have them both Brenda ❤️ Couldn't agree more, I absolutely love how you put that there! We can all share our wee bits of history and knowledge, something that's getting lost in today's world. Happy Easter to you as well and everyone else in our wee community, it really is growing into something special 🙌🏻 Sending you my best ❤️
