Porridge Scones

These were a favourite in Galway but I'd never seen them here at home. They are seriously soft and moist, packed with a rich nutty aroma compared to standard white scones. Making them in a muffin cases turned out to be a spark of genius and one I'll definitely use again. These slightly warm and plastered in real butter really are a treat.

Turn cooking mode on

Step 1

Add your porridge oats, bicarbonate of soda, salt and caster sugar to a bowl. Give this a wee mix before adding your butter. Work the butter through the mix with your fingertips, creating a breadcrumb texture.
