Fish Cakes

These fish cakes are so simple to make and most importantly delicious. Crisp on the outside, fluffy in the middle and packed with flavour. They aren't too overpowering with the fishy taste some don't like. But if you're a fan of that you can use some salmon or smoked fish.

Get your pan over a medium to high heat and pop in your haddock. Pour over 150ml milk and 150ml water. Bring to a boil and cover, then lower the heat and simmer for 5 mins. Take off the heat and set aside covered, for 10 mins. This will gently finish cooking the fish.

Made these tonight - clean plates! There was a mention of a possible 10! But apparently it would do. I actually made this with half smoked haddock and as this is a favourite in our house. This gave it a really nice flavour without being too overpowering.
