Danish Pastry

You'll see I mistook my recipe for puff pastry, I'm and eejit I know. But it worked out perfectly because I made some delicious maple pecan plaits with it. I was slightly daunted by this one but when you break any recipe down into stages, it makes life a lot easier. There's a bit of work in it but I find these bakes therapeutic. It takes me away from all the hustle and bustle in my head, one of the reasons I love cooking and baking so much.

Step 1

Sift your strong white flour into a large bowl. Sift your caster sugar and salt to one side of this and the scatter your yeast to the opposite side. Add your egg, egg yolk, tepid full-fat milk and water, mixing together until combined. You want it to come together into a firm dough and get your hands involved if needed.
