Strawberry and Raspberry White Chocolate Cheesecake

This was a new one I came up with and it went down a treat. The fact my Granda said you could take it for the breakfast says it all. It's deliciously smooth and creamy, with a tasty freshness from the strawberries and raspberries. A perfect wee summer dessert in my opinion but it would be a shame not to have it all year round.

Ingredients

Method

Turn cooking mode on

Step 1

Crush your digestives in a large bowl or blitz in a food processor. Add your melted butter to the bowl and mix these together until combined. Fire this into your 8 inch springform cheesecake tin, pressing evenly into the base. It's optional but you can pop this into a fan assisted oven on 170 degrees for 5-10 minutes to crispen the base slightly. If so allow to cool after and if not just pop it into the fridge and move onto your cheesecake filling.
