Banoffee Pie

A Banoffee Pie is always a winner here and one of my Nanny's favourites. This one has a delicious buttery shortcrust base, packed with smooth and somewhat chewy caramel. Then you have the light and delicate freshness from the bananas and softly whipped cream. The grated dark chocolate is an added bonus with the slight bitterness. The wild thing was, this recipe was created for the Great British Bake Off. I still don't think my Nanny and Granda believe me or can get over that.

Method

Turn cooking mode on

Step 1

Sift your flour into a bowl and add a pinch of salt, mixing these together. Add your butter and work this through with your fingertips to give a breadcrumb consistency. Be delicate and work the air through the mixture.
