Paradise Squares

These are a classic in our house and one of my favourites. People might see them as old fashioned, but the old ones are always the best if you ask me. They're packed with juicy fruit and nuts which give a beautiful texture. Along with the buttery and flaky pastry it's the perfect combination. They’re also pretty handy to make which is good, because never last long!

Turn cooking mode on

Step 1

On a lightly floured surface roll your shortcrust pastry (recipe is in the notes section) out to the size of your Swiss roll tin. Roll this into your tin and gently press it in at the edges, trimming off any excess with a knife.
