Madeira Cake

This plain wee cake will have been in everyone's cupboard at some point and you know what it can’t beat. Especially when it's homemade and plastered in real butter. It may look unassuming and plain, but it’s delicious with hints of lemon and vanilla. You can even pair it with some homemade custard which floods me with nostalgia every time, taking me back to my childhood.

Turn cooking mode on

Step 1

Add your butter and caster sugar to a large mixing bowl, creaming these together until soft and light. Give the sides a good scrape down midway through so it's getting fully combined.
