Blueberry Muffin Cake

What beats a blueberry muffin? A blueberry muffin cake! My Granda has an obsession for the muffin variety so when he gives this the seal of approval you know it’s a winner. It's packed with juicy blueberries and the light, moist sponge with the crisp exterior is such a great combination. With the crunch of the sugar and warm creamy custard you're really in for a treat! It’s got me thinking, there’s probably a heap of things that could be transformed into a cake version. So if you’ve any ideas let me know and I’ll have to get my thinking cap on as well.

Method

Turn cooking mode on

Step 1

Take your lemon zest and pop this into your sugar. Work it through with your fingertips to get the flavour going. Fire your butter and lemony sugar into the mixing bowl, beating these together until they're light and fluffy. Every so often give the sides a scrap down, so its fully combined.
