Upside Down Banana Cake

Think banana bread but upside down with a beautifully caramelised top. It's one sure way to level up your standard banana bread and it's so simple to make. The sponge is so moist from the banana and yoghurt, bringing a real freshness. The taste doesn't lack in the slightest either with hints of spice. A deep caramel flavour from the topping and a sweet bitterness from the dark chocolate chunks. I had a slice when it was warm with freshly whipped cream and it was a match made in heaven.

Turn cooking mode on

Step 1

Add your sugar and mashed banana to a large mixing bowl. Whisk this together until it forms a smooth paste. Add your melted butter, vanilla extract, eggs and yoghurt and whisk until it's fully combined and smooth.

This cake looked & smelled so good we had to try it before I even remembered to take a photo! A fantastic cake that went down really well. I made a slight error by accidentally putting my 200g light brown sugar into the cake batter mix... but thankfully it turned out ok! Thank you for another fab recipe ☺️
