Colcannon

It’s hard to beat a good spud but add some bacon, cabbage, butter and cream and you’ve got yourself a dangerous combination. If you’ve never had colcannon you're in for a real treat. I've seen me have it as a meal on it's own, it's that good. It's a real traditional variation on the humble spud and one I can't get enough of.

Method

Turn cooking mode on

Step 1

Add a 1/4 of your butter into a pan and melt this down. Fire your bacon into the pan along with your cabbage. You want to cook these down for about 5-10 minutes, to crispen the bacon and soften the cabbage.

I can’t wait to make this. I have lived in Georgia USA for 42 yrs but am Irish. I have loved watching all your Insta reels with your granny and granddad.
