Crispy Pesto Potatoes

It’s no secret that I love a few spuds and I'd argue no meal is complete without them. The beauty of a spud is you can do so much with them. The variations are endless and I need to start churning out some recipes. These crispy pesto spuds were a good place to start. They have a delicious herby flavour with the added richness, nuttiness and cheese like taste from the pesto. They have a lovely crisp coating and are fluffy on the inside, just how they should be.

Turn cooking mode on

Step 1

Get your potatoes rinsed and cleaned in some cold water. Cut them into the size you'd expect a roast potato to be. Par boil these for about 10 minutes to just soften them slightly. You'll know they're ready when a knife slides in and out with ease.

Loved these, really simple and make a change from normal roast potatoes … used baby potatoes for a change as well and I promise I didn’t cremate them, just heavy handed with the pesto as always 🤣
