Lemon and Blueberry Scones

Call it a scone (it’s gone) or a scone (s’cone), either way these lemon and blueberry scones are a tasty change up. They're delicately soft but equally as moist and best of all packed with juicy blueberries. The addition of lemon is the perfect combination when it comes to blueberries and this is no different. They're perfect for a quick homemade lunch or a wee family picnic.

Method

Turn cooking mode on

Step 1

Sift your flour into a bowl along with your caster sugar, baking powder and salt. Mix these together and then add your butter. Work this together to give a nice breadcrumb consistency. You can also do this stage in a food processor.

Just made these and they’re very good. Light and tender and not too sweet. The ingredient list was missing the salt, so i just guessed and added about and eighth of a teaspoon or so. I would make them again.
