Flan Cake

My Mum made this blast from the past and it really brought back the memories. It might not look that fancy but ohh boy does it go down a treat. You probably won't even recognise it, but I'm sure those local to me will be transported back to their childhood. It has a seriously light sponge, almost cloud like. Filled with a combination that you didn't know you need.. Marshmallow, pineapple and softly whipped cream. It may sound odd but my goodness does it work. Fresh, fruity and loads of texture.

Method

Turn cooking mode on

Step 1

Add your eggs to a mixing bowl and whisk on a high speed for a few minutes until they froth up. Gradually add your sugar a tbsp at a time, continuously whisking. The mixture will grow in volume and become smooth, light and have air bubbles.
