Traditional Apple Tart

A Nanny’s apple tart is hard to bate And I’ll argue to the cows come home that my nanny’s is the best. I think all of our Nanny's have their own way of doing a tart, mostly by eye and instinct. Maybe that's what makes it so special and you can see this through the video. From the delicate, buttery pastry to the sweet but slightly tart apples. What's not to love? The only thing up for debate is what topping? Ice cream, custard, whipped cream? You know by now I'm having all three if I can, 'the trifecta'.

Turn cooking mode on

Step 1

The pastry recipe for traditional tarts is on the site. Get your pastry onto a lightly floured surface and cut in two. Roll a piece out to about 1/2 cm thick and to the size of your large dinner plate. Have the plate lightly greased with some butter. Roll your pastry onto your rolling pin to make things easier, then roll back out onto the plate.

340 g Plain flour

210 g Butter

Step 2

Roll the other piece of pastry out, this time make it slightly bigger than your first piece. This ensures it will cover the tart fully as the filling will make it bulge up.

Step 3

Peel, core and slice your apples to 1/2 cm in thickness.

3-4 Bramley apples

Step 4

Dust your pastry base with some cornflour, this helps absorb some of the juices from the filling and thickens up nicely. Layer 1/2 your apples on, sprinkling roughly 6 tbsp of caster sugar over these. Layer the rest of your apples on and sprinkle again with roughly 6 tbsp caster sugar.

1 pinch Salt

1 tbsp Caster sugar

Step 5

Give the edge of your pastry a rub with some water to help seal. Now roll over your other piece of pastry, using the side of your hands to gently press it down and onto the pastry base. With a thumb ensure both pastries are sealed together and trim any excess off with a knife. You can make a wee design around the edges with a fork or your thumb.

2 tbsp Cold water

Step 6

Lightly egg wash the top and prick all over with a fork. Cut a X in the middle to allow any steam and moisture to escape. Now pop this into a fan assisted oven on 160 degrees for about 40-45 minutes or until nicely browned and golden on top. Once removed dust with some caster sugar and then enjoy with your favourite toppings!

St Patrick’s Day baking. Some of the family will have custard the others cream. Good roundoff to St Patrick’s Day meal of baked ham, potatoes and cabbage. My mother added cinnamon and my grandmother also included raisins sometimes - it really works!

Didn’t even last to the next day! Thought it would be nice to have a slice with a cup of tea this morning. Gone. Not even a crumb but they did leave me the empty dish to wash!😵‍💫

Never baked before joining hungry hooker club . Made using eating apples 🍎 as apples were gifted and gifter stated his daughter in law was American and always used eating apples 🍎 for Baking 😊👍
