Almond and Orange Cake

It’s amazing how food can bring back great memories and this recipe is one of them. I got to bring my Granda to London for a rugby match and we shared a slice of something similar over a coffee. It had a delicious almond flavour and freshness from the orange zest. Along with a healthy drizzle of honey and a plop of natural yoghurt on the side. I had to recreate it and it was just as good if not better according to him. I know for a fact this wee cake will hold special memories for me and I hope you enjoy it to.

Method

Turn cooking mode on

Step 1

Add your egg yolks to a bowl as well as your caster sugar. Beat these together until they become light and foamy, which can take up to 5 minutes. Add your orange zest, orange juice, oil and almond extract, beating for another minute to combine. Then in with your almond flour and baking powder, gently beating until it's combined and smooth.
