Chicken and Leek Pie

It’s hard to beat a chicken pie and this one might top them all. Using chicken thighs really adds to the flavour, along with the addition of garlic and rosemary. The leeks and mushrooms only add to the creaminess the crème fraîche provides and I absolutely loved it. I think you'll be pleasantly surprised with this recipe and let me know if you give it a try.

Method

Turn cooking mode on

Step 1

Melt your butter down in a large pan and then add your chicken and rosemary, cooking through for about 10-15 minutes. Once cooked pop it into a bowl and set aside. If your pan is dry add some butter and fire in your leeks and onion, softening these down for about 5 minutes. Now get your garlic lobbed in and stir through, cooking for a further minute. Now bait your chicken back in along with your mushrooms.

The sort of weekend where comfort food is required, couldn’t justify a sweet bake as I may or may not have eaten nearly a whole bag of M&S cookies 😏🤣 so decided on an emotional support pie instead, which was delicious with pesto potatoes and honey mustard roasted carrots 🥰
