Coconut Bounty Cheesecake

If you’re a coconut lover you’ll want this wee dessert. I have a soft spot for the stuff and wanted to create a dessert packed with it. It's not your normal cheesecake but believe me it tastes delicious. Smooth and creamy like all cheesecakes but full of texture and coconutty flavour from the toasted coconut. And the wee chewy chunks of Bounty are an added bonus when you find them.
