Mum’s Pavlova

My Mum’s Pavlova is legendary in our family and hands down her best dessert. It's ridiculously light and moreish, to the point were my Uncle John has eaten a whole one to himself. There's been war of this pavlova and for good reason, it's that good. I think most family members have even had it for the breakfast and that's not even a joke!

Method

Turn cooking mode on

Step 1

Get your egg whites into a separate bowl and ensure there's no shells or yolk in it. My Mum always says you need your mixing bowl perfectly clean, so wash with warm water and dry well. Add your egg whites to the mixing bowl and loosely whisk for a few minutes to break them up.

It went really well together , the cream tasted like white chocolate and the inside was fluffy and tasted like marshmellows :)

It's crisp on the out side, with an airy, bubbly centre 🤤 It's very light, almost like a foamy sponge in a way? I'm describing this so badly, apologies 😅

Is it a bit like roulade? Coz I'm veggie. I'm a bit funny about eggs, I eat meringues, but need them to be the kind you'd use in Eton Mess, like hard and crispy all the way through, is this like that? (Otherwise it'll give me the gawgs)🤢🤣 Cheers Jonny xxx

The outer shell is definitely crisp but not the inside Máirín, it might not be the one for you then 😅

Have made this recipe a few times now and it’s a winner! Perfect crispy on the outside and light & yummy on the inside! I used fresh mango & lychee with a strawberry purée for our Christmas pav.. :)
