White Chocolate Brownies

There aren't too many know about white chocolate brownies and they'll argue they're a blondie. But trust me they're far from it. I created these in Galway when I supplied coffee shops in the area and they were a huge hit. You’ll be surprised how good they are, moist and fudgy just like a brownie should be. With a delicious sweetness, the perfect accompaniment with a strong coffee.

Method

Turn cooking mode on

Step 1

Melt your butter and white chocolate over a bain-marie (a guide to this is in notes). Once melted add your condensed milk and mix through until smooth and combined. Pour this into your mixing bowl and add your vanilla extract, whisking until combined. Allow to cool slightly and then add your eggs, beating until smooth and combined
