Banana and Sultana Pancakes

These pancakes are a bit of a twist using banana. One thing banana provides in bucket loads is moisture not forgetting extra flavour. They were a big hit for lunch, light, moist and a lovely sweet chew when you get a sultana. I don't even think they require a topping, just a healthy spread of real butter to melt down your hand. They're nothing fancy or complicated, just a great wee pancake to tie you over until dinner time.

Method

Turn cooking mode on

Step 1

Sift your flour, baking powder and caster sugar into a bowl and mix together. Add your mashed banana and egg to a separate bowl and combine. Add this to your dry ingredients and gradually add you milk as well, mixing between each addition until smooth. Add your sultanas to the mixture and mix these throughout.
