Caramel Apple Pie

This was a change up from our normal apple tart and I'm not complaining. It really was the business and the fact my Granda Alfie finally gave it a 10 proves it. The pastry has a lot more crunch and texture compared to our go to but that works so well with the thick caramel apple filling. It has a hint of spice to cut through the sweetness as well as that distinct tartness from the bramley apples. I've a feeling you'll love this just as much as my Granda did.

Add your flour, ground cinnamon, ground ginger, icing sugar and butter to a food processor. Blitz this until it starts to form into a breadcrumb. Gradually add you egg and blitz between each addition. When it comes together pop it into a bowl and form into a ball with your hands. Wrap this in clingfilm and fire it into the fridge to chill for 30 minutes.
